Growing into the dietitian I once needed.

Hi, I’m Jessica also known as Jess or Aunt Jessie, a dietetic intern, lifelong learner, former Disney cast member, and someone who has been living and learning with type 1 diabetes for more than two decades.

Pancreas in Progress began as a space to document my supervised practice experience across community nutrition, food service management, and clinical rotations, moving toward one goal, to become a Registered Dietitian. As a non-traditional student who chose a new career path in her thirties, this blog reflects both professional growth and personal evolution, learning not just how to practice nutrition care, but how to do so with empathy, curiosity, and intention.

Living with type 1 diabetes has shaped the way I see health, food, and care. It taught me resilience early on and gave me a deep appreciation for education that meets people where they are. As I work toward becoming a registered dietitian, my goal is to support individuals, especially those living with type 1 diabetes, in feeling informed, capable, and not limited by their diagnosis.

This space is rooted in science but guided by lived experience. It’s about progress over perfection, learning in real time, and building a career focused on understanding, positivity, and meaningful impact.
